Timut or Timur pepper is a small berry that is widely used by professional chefs. It has strong notes of grapefruit and candied citrus fruits, mixed with notes of lime and combava.
Originating from the mountains from Nepal, this "false pepper" is harvested at an altitude of over 2000m. Timut pepper is a basic spice for the Terai people who live in the wetlands of southern Nepal.
The Timut berry excels on shellfish (lobster, scallops ...) but can also be used on goat cheese or a citrus salad.
In order to preserve all its flavours, Timut pepper can be infused whole in a syrup, a compote or crushed in a sauce.

Suite à la réception d'un échantillon gratuit de votre part, je me suis intéressé à cette baie. Notamment lors de la préparation de Tagines. mariage parfait entre son arôme d'agrumes, le bâton de cannelle, et la coriandre fraîche.
