The Java long pepper is the fruit of a liana from India, growing in a wild way of Himalaya's buttress. Historically, it is the first pepper introduced in Europe. The flavour of Java's pepper is hot and slightly sweety, between cinnamon, green anise and liquorice. It has a really fruited and sweety perfume, but less strong and spicy than black pepper. SUR LES QUAIS recomends to use it with osso buco, the famous goat cheese with fresh milk, winter soups. But don't hesitate to use long pepper in all of your dishes as a traditionnal pepper. It is also really adapted to desserts, of fruits ( strawberries, compotes, melons...), on chocolate, on your lemon pies and white cheeses.
