The greatest classic of curries! In India, each family has its own curry recipe, a mixture of spices specific to each one that varies according to the region, the land, and the products they enhance. Indeed, the term "curry" designates a mixture of spices with infinite variations, not a single spice.
This curry comes from Madras, a port city on the Coromandel coast, in the state of Tamil Nadu, in southeast India, but it is used well beyond this region in India. Madras curry is also called "yellow curry" because of the presence of turmeric in its composition.
Literally, the term "curry" means "sauce" and embodies a traditional cuisine where food is simmered for a long time with these spice mixtures in water or coconut milk to obtain this so-called sauce.
Our Madras curry is very fragrant, perfect for pan-fried dishes or with coconut milk in a simmered dish (chicken, lamb, shrimp).

Les épices ne sont pas donnés au vue de la quantité, mais je ne regrette pas du tout. Elles ont vraiment du goût et subliment le plat.
