This blend gives a Mediterranean flavor to many dishes: grilled meats, brochettes, baked fish, vegetable pies, ratatouille, fresh cheeses, marinades... Herbes de Provence tolerate cooking well (except for sarriette), however they release much more flavor when added at the end of cooking.
