The Chipotle pepper is a dried smoked jalapeño pepper, prepared according to a method that goes back to the Aztec era. The Jalapeño pepper, from the Solanaceae family, is a pepper native to the province of Vera Cruz in Mexico; green or red depending on its degree of maturity. In order to transform it into Chipotle, it is dried at 74°C on shelves in closed rooms for several days, using a hot smoking technique. Chipotle is between 5,000 and 10,000 on the Scoville scale, which makes it a moderate pepper in spiciness. The Scoville scale, created at the beginning of the XXth century, aims to measure the intensity of spiciness of the peppers by evaluating the level of capsaicin, responsible for the sensation of heat. Classic of the - Mexican cuisine, it is used in many sauces. It can also be used with grilled meats, kidney beans, guacamole or a chocolate dessert! Presented in the form of flakes (chili flakes) you just have to sprinkle some on your dishes to spice them up and give them character.
