Allspice is a bay which surprises by its hot, soft and perfumed notes. This berry is the dried fruit of the Pimenta dioica tree native to Mexico, Cuba, Haiti and Jamaica. Its use is not new, the Aztecs used it to perfume chocolate or during death ceremonies.
