The Tonka bean, dipterix odorata, is contained in the fruit of a tree which grows in Venezuela and Brazil. When it is ripe, this oval fruit falls on the ground, where it is harvested then dried for a year before its grains are harvested. It is only recently that these grains made a grand entrance in French Cuisine, with top chefs perfuming their creations with the subtle aromas of this spice. Indeed, it is quite difficult to summarise the taste of this spice, with silky and captivating perfumes, which should be used sparingly. Its flavour is reminiscent of vanilla, chocolate, almond, caramel and tobacco at the same time. Spicy, slightly smoked, its particular taste do wonders with desserts, especially with creams, chocolate, vanilla. To use Tonka Bean, grate it or ground at the last minute to preserve its properties.
