Ras-el-hanout is a strongly perfumed blend of spices, slightly spicy and sweet. Its particular taste, hot and smooth, makes it a symbol of Morocco, where it enhances couscous, tajins, pastillas and vegetable dishes. It is traditionally composed of about twenty spices but its composition changes from one shop to the next. If the blend changes, some spices are essential: cinnamon, ginger, coriander, cardamom, nutmeg, black pepper and curcuma. Ras-el-hanout can also contain varieties of pepper, macis, clove, cumin or galanga. You can use this spice to enhance the flavours of sweet-salty dishes, spice up dishes with sauce, add taste to white fish and seafood, or sweet vegetables like carrot, squash, turnip, and also to perfume rice.
